It’s easy to get into a food rut. I know I prepare just about the same salad for lunch every day. Some days I just can’t face it.
That’s when I’m tempted to skip the salad and go out for pancakes.
Then I found this recipe for Fattoush Salad, which is a Mediterranean salad I’d never heard of. It’s a little more work than the average garden salad, but it sure is worth it.
There’s a lot of fresh herbs, such as mint and dill, along with some dried ones. The yogurt and tahini add a little protein to the mix, and the whole creation is just beautiful.
